Instructions
Prepare the Zucchini: Wash the zucchinis and slice them into thin, uniform rounds.
Prepare the Breading: In a shallow bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Place the beaten eggs in another shallow bowl.
Coat the Zucchini: Dip each zucchini slice into the egg, allowing any excess to drip off, then coat with the breadcrumb mixture. Press lightly to ensure the coating sticks.
Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for 2-3 minutes.
Cook the Zucchini Chips: Lightly spray the air fryer basket with cooking spray. Arrange the breaded zucchini slices in a single layer in the basket, avoiding overlap. Spray the tops of the chips lightly with cooking spray. Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.
