What is Bulgogi?

Bulgogi, literally translating to fire meat, is one of the most popular dishes in Korean cuisine. This dish typically consists of thin, marinated slices of beef, usually cooked on a grill or stovetop. The marinade, made from soy sauce, sugar, sesame oil, garlic, pepper, and other ingredients, imparts a sweet, savory, and slightly smoky flavor to the beef. When combined with the rice in a bulgogi fried rice recipe, the result is a rich and deeply satisfying dish that celebrates the best of Korean and Asian fusion flavors.

Ingredients for Bulgogi Fried Rice

  • 1 pound thinly sliced beef (ribeye or sirloin)
  • 4 cups cooked rice ( using a rice cooker)
  • 2 tablespoons sesame oil
  • 1 cup diced onions ( using a knife and cutting board)
  • 1 cup sliced carrots
  • 1 cup chopped bell pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons sugar
  • 4 cloves minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon gochujang ( Korean chili paste)
  • 2 eggs, lightly beaten
  • 2 green onions, thinly sliced
  • Sesame seeds for garnish

For Bulgogi Marinade:

  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 Asian pear, grated (optional) - this adds a unique sweetness and helps tenderize the meat

Step-by-Step Instructions

Marinate the Beef

Start by preparing the bulgogi marinade. In a large mixing bowl, combine soy sauce, sugar, sesame oil, garlic, black pepper, and grated Asian pear if using. Mix well until sugar is dissolved. Add the thinly sliced beef to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least one hour, though overnight marination is preferable for deeper flavors.

Cook the Beef

Once the beef has marinated, heat a large skillet or wok over high heat. Add a tablespoon of sesame oil and let it heat up. Then, add the marinated beef to the skillet, spreading it out in a single layer. Cook for about 2-3 minutes on each side until the beef is nicely browned and slightly caramelized. Transfer the cooked beef to a plate and set it aside.

Prepare the Vegetables

In the same skillet, add another tablespoon of sesame oil. Add the diced onions, sliced carrots, and chopped bell pepper. Saut for about 5-7 minutes until the vegetables are tender and slightly caramelized. Add minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Make the Fried Rice

Push the cooked vegetables to one side of the skillet, creating space for the eggs. Pour the beaten eggs into the skillet and scramble them until fully cooked. Mix the scrambled eggs with the vegetables. Next, add the cooked rice to the skillet, breaking up any clumps with the back of a spoon. Pour in the soy sauce and gochujang, stirring well to evenly distribute the sauce. Cook for another 5-7 minutes, allowing the rice to absorb all the flavors.

Combine and Serve

Finally, add the cooked beef back into the skillet, mixing it thoroughly with the rice and vegetables. Cook for an additional 2-3 minutes, allowing all the flavors to combine. Remove from heat and sprinkle with chopped green onions and sesame seeds before serving. Pair this delectable bulgogi fried rice with a side of kimchi or a fresh cucumber salad for an authentic Korean dining experience.
