1. Cooking the Sushi Rice

Lay the sliced fish and vegetables in a line across the center of the rice. Carefully roll the mat, pressing gently to form a firm roll. Seal the edge with a little water.

4. Preparing and Frying the Roll

Prepare the tempura batter mix according to the package instructions. Heat a deep-fryer or a deep pan with vegetable oil to 350F (175C). Dip the sushi roll into the tempura batter, ensuring it is fully coated. Carefully place the roll in the hot oil and fry until golden brown and crispy. This should take about 2-3 minutes. Remove the rolled sushi and place it on a paper towel to drain the excess oil.
