Roast Chicken & Veggie Duo Recipe

Roast chicken with vegetables is a wholesome, flavorful meal that’s easy to prepare and perfect for any occasion. This recipe combines juicy, seasoned chicken with a medley of roasted vegetables for a complete one-pan (or one-basket) dinner.
Ingredients
For the Chicken:

4 bone-in, skin-on chicken thighs or drumsticks

Instructions
Prepare the Chicken: Pat the chicken pieces dry with a paper towel. In a small bowl, mix olive oil, paprika, garlic powder, thyme, salt, and pepper. Rub the mixture evenly over the chicken.
Prepare the Vegetables: In a large bowl, toss the vegetables with olive oil, Italian seasoning, salt, and pepper. Ensure they are evenly coated.
Oven Method: Preheat the oven to 400°F (200°C). Arrange the chicken and vegetables on a large baking sheet, ensuring they are spread out in a single layer. Roast for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized. Flip the vegetables halfway through for even cooking.
Air Fryer Method: Preheat the air fryer to 375°F (190°C). Place the chicken in the air fryer basket and cook for 25-30 minutes, flipping halfway through. Add the vegetables in a single layer during the last 15 minutes of cooking, shaking the basket occasionally for even roasting. Cook in batches if needed.
Serve: Remove the chicken and vegetables from the oven or air fryer. Let the chicken rest for 5 minutes before serving. Garnish with fresh herbs if desired.
