Ingredients
-
4 large bell peppers (any color)
-
1 pound ground beef, turkey, or plant-based alternative
-
1 cup cooked rice or quinoa
-
1 cup diced tomatoes (canned or fresh)
-
½ cup diced onion
-
1 cup shredded cheese (cheddar, mozzarella, or your choice)
-
2 cloves garlic, minced
-
1 teaspoon Italian seasoning
-
½ teaspoon paprika
-
Salt and pepper to taste
-
Olive oil for brushing
Instructions
Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Brush the insides lightly with olive oil and set aside.
Cook the Filling: Heat a skillet over medium heat. Cook the ground meat or alternative with onions and garlic until browned. Drain excess fat if needed. Stir in cooked rice, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Cook for 2-3 minutes to combine flavors.
Stuff the Peppers: Fill each bell pepper with the prepared mixture, pressing down lightly. Top with shredded cheese.
Oven Method: Preheat your oven to 375°F (190°C). Place the stuffed peppers in a baking dish. Add about ¼ inch of water to the dish to help the peppers soften. Cover with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Air Fryer Method: Preheat your air fryer to 360°F (180°C). Place the stuffed peppers in the air fryer basket. Cook for 12-15 minutes, or until the peppers are tender and the cheese is golden and bubbly.
Serve: Remove the stuffed peppers carefully and serve warm. Garnish with fresh herbs like parsley or basil if desired.
