To grill whole fish or fillets: Oil the tray. Season the fish and lay it on top. Place tray on the grate and grill by indirect heat method until the fish is sizzling, browned, and cooked through.
To grill beef or pork tenderloin: Set up grill for indirect grilling and preheat to high with tray positioned on the grate. When tray is hot, place oiled, spiced or herb crusted beef or pork tenderloin on the tray. Grill until sizzling, browned, and cooked to the desired temperature, turning with tongs to sear all sides on the hot tray.
To preserve and extend the useful life of the grill tray, wash with a mild dishwashing soap, rinse, and dry immediately. Do not use metallic scrubber. Dishwasher-safe.
